Tom Yum Soup - Hot & Sour Thai Soup
My recipe for everybody's favorite Thai soup is finally here! This Tom Yum soup recipe is easy once you have all your ingredients prepped and ready to assemble!

What is Tom Yum soup?
This hot and sour soup is a popular Thai dish. It consists of a mix of different aromatic ingredients. When all are put together in one soup, each bite makes you wanting more!
This soup includes fresh ingredients such as lemongrass, Thai chilies, and garlic.
What I love most about this soup is that you can add all types of vegetables you like.
Oh, and you cannot forget about the shrimp!
Ingredients
1 tbsp Oil
4 tbsp Tom Yum Paste
4 Garlic Cloves, minced
7-10 Medium Sized Shrimp
3 Thai Chilies, minced
1 tsp Ginger, thumb-size pieces
2 cups Mushrooms, sliced
4 cups Vegetable Broth or Water
2 Sticks of Celery, chopped
2 Stalks of Lemongrass, cut into 1-inch pieces
10 Cherry Tomatoes, cut in half
Instructions
Start by heating up your oil. Once heated, add in your tom yum paste and your garlic pieces.
Let that fry for about 1 minute, or until your garlic starts turning brown.
Add in your shrimp. Cook until your shrimp is about 50% done. Don't overcook them.
Add in your chilies with the ginger pieces and that those fry for about 30 seconds to a minute. We want all the flavor and the spice to come out of the chilies.
Now time for the mushrooms. Add those to the pot and give everything a good mix. Let the mushrooms soften for a couple of minutes.
Pour in your vegetable broth. You can use water as well but vegetable broth has more flavor to it.
Add the remaining vegetables. Celery, lemongrass, and tomatoes.
Give the soup a good mix and then turn your heat down to medium-low. Cover your pot and let it simmer for 3-5 minutes. This will allow the flavors to extract from your ingredients and let them soften.
When done, you can eat the soup by itself, or eat it with noodles or rice! Don't forget to squeeze fresh lime onto it!
