Salmon Taco with Mango Salsa

If there is any salmon recipe out there I'd recommend you try, it's this one. It's flavorful, it's beautiful, it's quick, and it's easy! These salmon fillets are marinated with a simple spice mix, then they're pan-seared until beautifully browned. Then the salmon fillets are flaked and served over toasted corn tortillas, topped with a tropical mango salsa!

Here is the list of ingredients you need:

Ingredients

For the Salmon

- 3 to 4 Salmon Fillets

- 3 tbsp Cooking Oil

- 3 tsp Salt

- 2 tsp Black Pepper

- 3 tsp Paprika

- 2 tsp Crushed Red Pepper Flakes

For the Mango Salsa

- 1 Whole Mango

- 3 Jalapenos

- About a Handful of Cherry Tomatoes

- About 1 tbsp Cilantro

- Juice of 1 Lime

Start by combining your salmon marinade in a small bowl.

Pour the marinade over your fillets and make sure to cover all of the salmon with the marinade. Front and back.

In a pan, heat your oil on medium-high and add your fillets. Pan-sear on both sides until it turns a nice brown color.

While your salmon is cooking, let's prep the mango salsa! Chop up your jalapenos and cilantro. Slice your tomatoes in half and chop your mango into square, bite-size pieces.

Add to a small bowl. Squeeze 1 to 2 limes into the bowl and for more flavor, I like to sprinkle some salt and drizzle some oil on the salsa.

When your salmon is done, flake the fillets with 2 forks and add them to a large bowl. For the tortilla, I like to use corn tortillas. I toast them in a pan on high heat with about a tsp of oil. And once your tortillas are toasted, top it off with your salmon and salsa and squeeze some more limes and enjoy!
