Potato and Vegetable Samosa

These crispy samosas are filled with a delicious spicy filling you will enjoy with every bite you take. One reason samosas are so loved is because of the golden, crispy outside with the soft, flavorful inside it makes your mouth water just thinking of them!

What's beautiful about samosas is everyone makes them differently. With different meats, spices, and vegetables. It's also a perfect Ramadan Iftar appetizer after long, fasting days!

Ingredients

- 6 to 8 Potatoes, peeled and chopped

- 1 Onion, diced into tiny pieces

- 2 tbsp Garlic, minced

- 1 Frozen Package of Peas & Carrots & Corn

- 4 Green Chili Peppers, diced into tiny pieces

- 2 tsp Salt

- 2 tsp Chili Powder

- 2 tsp Turmeric

- 2 tsp Coriander

- 2 tsp Garam Masala

- 1 tsp Crushed Red Pepper Flakes

- 1 to 2 Eggs (for the "glue")

  • Let's prep our veggies! Peel and chop your potatoes and boil them until they are softened. Once cooked, drain and set aside to cool down.

  • Dice your onion into super tiny pieces and mince your garlic cloves.

  • Also, dice your chili peppers into tiny pieces. I used 4 but if you want less spice you can use 1, 2, or even none!

  • Heat about a tsp of oil. Once heated, add your onion and garlic and fry your onion/garlic until they start turning a nice brownish color.

  • Once that's done, add your frozen peas/carrots/corn. Mix and let it cook for a couple of minutes so everything can soften.

  • It's time for the spices! Add all your spices into the pot of veggies and mix until all is well combined. Let it cook for 30 seconds to a minute so the veggies can soak in all the flavorful spices. :)

  • Now that everything is done, it's time to combine everything together. In the pot where you cooked your veggies, add your potatoes.

  • Mix everything together and lightly mash the diced potato pieces while combining everything. If you like to completely mash your potatoes go for it. I like to leave small pieces of potato.

  • It's time to assemble the samosas! I like to use premade pastry. I recommend setting up a train of everything needed to assemble the samosas.

  • You need the pastry, filling, and an egg or 2 (depending on how many samosas you're making) for the "glue" to properly make the samosa.

  1. Lay your pastry flat on your plate.

  2. Dab a bit of your egg wash on the bottom corner of the pastry. Then, fold your pastry from corner to corner as shown in the picture.

  3. Take the right corner and fold it over. Add your egg wash to the top of that little triangle.

  4. Fold over the left corner.

  5. You should have a pocket for the filling.

  6. Fill your samosa. About 1 tbsp.

  7. Fold in the two wings of the pasty.

  8. Add some egg wash to the closing piece and close your samosa!

  • After you've wrapped all your samosas, it's time to deep fry them!

  • Set your oil at 350 degrees F. Once it reaches that temperature, carefully set your samosas in one at a time and fry for about 1-3 minutes or until they turn a beautiful golden color.
