Pineapple Fried Rice with Shrimp

I'll be honest, I was never a fan of the thought of fruit going in, well, salty foods. But you know what they say... never say never!

When my husband first introduced me to pineapple fried rice at a Thai restaurant, I was hesitant but fell in love at the first bite. So of course, I had to make it myself!

An important tip when making fried rice:

Use cold rice. The best rice to use is 1 to 2-day-old rice. If you don't have pre-cooked rice to use, plan ahead. Make your rice in the morning or a few hours before making the fried rice and let it sit and cool down before you use it.


Here's a quick list of the ingredients you'll need:

Ingredients

- 1 Whole Pineapple

- 10 to 20 Large Shrimp (you can use more or less)

- 4 medium eggs

- 1 tsp Salt

- 1 tsp Pepper

- 1 tsp Garlic Powder

- 1 tsp Onion Powder

- 1 Onion

- 4 Garlic Cloves

- 1 Pack of Frozen Mixed Veggies (or fresh veggies)

- 2 tbsp Sesame Oil

- 2 cups PRE-COOKED White Basmati Rice

- 2 tbsp Butter

- 2 tbsp Soy Sauce

- 1 tbsp Crushed Red Pepper Flakes (optional)

You want to start by cutting your pineapple in half. Make sure you rinse the pineapple before cutting if you want to eat the rice from the pineapple core.

Cut the pineapple out of the core as best as you can. I will admit, it is hard but if I can do it, so can you! ;) Add your diced pineapple to a bowl and set it aside.

Thaw your shrimp (if frozen) and put it in a bowl. Add about a teaspoon of salt, garlic, and onion powder. Mix together. Heat about a teaspoon of cooking oil in a pan and add the marinated shrimp to it. Cook until your shrimp is cooked to your liking. I like mine to get a bit crispy. Put your cooked shrimp on a plate and set it aside.

In a bowl, add your 4 eggs and season with 1 teaspoon of salt, pepper, and onion powder. In the same pan you cooked your shrimp, add about another teaspoon of cooking oil and scramble your eggs. Set them aside with your shrimp.

Set aside your shrimp and eggs for later use.

Dice your onion and mince your garlic cloves.

In the same pan you fried your shrimp and eggs, add another teaspoon or 2 of cooking oil and when it heats up, add your diced onion. When the onion becomes translucent, add your garlic. Fry until both turn a brownish color.

Add your frozen (or fresh) veggies and mix them all together. Cover your pan and fry until your veggies are softened.

Add your diced pineapple. Mix until all are combined in the pan. Cover and fry for about a minute or two.

Add your scrambled eggs and shrimp to the vegetable mix. Mix until combined. Then add 2 tablespoons of sesame oil. Mix together and let fry for about a minute or so.

My pan was too small to add the rice so I transferred my vegetable mix to a bigger pot. Add your 2 cups of rice. Mix until well combined.

Add 2 tablespoons of butter and 2 tablespoons of soy sauce. If you want some spice to the rice, add about a tablespoon of crushed red pepper flakes. Mix it until combined. Fry your rice until your butter is melted and then it's done! Serve it in a bowl or if you want the full experience, serve it in the core of the pineapple.

  • 2 tbsp Soy Sauce

  • 1 tbsp Crushed Red Pepper Flakes (optional)

Instructions

  1. Start by cutting your pineapple in half and then cut the pineapple out of the core as best as you can. Add your diced pineapple to a bowl and set aside.

  2. Thaw your shrimp (if frozen) and put them in a bowl. Add the salt, garlic, and onion powder and mix. Heat a teaspoon of cooking oil in a pot and add the marinated shrimp. When done cooking, add to a plate and set aside.

  3. In a bowl, add your 4 eggs and season with salt, pepper, and onion powder. Whisk and then in the same pot, add another teaspoon of oil and scramble your eggs. Put the cooked egg on the same plate as the shrimp and set aside.

  4. Dice 1 onion and mince 4 garlic cloves. In the same pot, add another teaspoon of oil and add your diced onion. When the onion is translucent, add your garlic. Fry until both are turning a brownish color.

  5. Add the frozen veggies and mix all the vegetables together. Cover the pot and fry until your veggies are softened.

  6. Add the diced pineapple to the vegetables. Mix together and cover the pot and fry for a minute or two.

  7. Add the scrambled eggs and shrimp to the vegetable mix. Then add the sesame oil. Mix until well combined and let it fry for about a minute.

  8. Now it’s time to add the rice. Combine the rice with the vegetables.

  9. Add the butter and soy sauce. If you want some spice to the rice, add about a tablespoon of crushed red pepper flakes. Mix until well combined.

  10. Fry your rice until your butter is melted, then it should be done!

  11. Serve it in a bowl or if you want the full experience, serve it in the core of the pineapple.
