Lasagna Spinach Roll Ups

This has to be the best recipe for lasagna roll-ups. It's so easy to make with only a handful of ingredients. It has the same concept as making regular lasagna with all the yummy layers but these lasagna rolls ups are way more fun to make and eat!

Remember when I said there were only a handful of ingredients for this recipe? Yeah, I wasn't kidding. Look!

  • Lasagna Noodles

  • 1 tbsp Oil

  • 1 Onion, chopped

  • 3 Garlic Cloves, minced

  • 1 lb Ground Beef

  • 2 tsp Salt

  • 2 tsp Black Pepper

  • 1 tsp Paprika

  • 1 tsp Crushed Red Pepper Flakes

  • 16 oz Container Ricotta Cheese

  • 2 Eggs, scrambled

  • Mozzarella Cheese

  • Spinach (optional)

  • Your Choice of Red Pasta Sauce

Okay, it might look like a lot but it's not! Come on, let's make this yummy recipe and you'll see just how easy it is. ;)

  • The first step, preheat your oven to 400 degrees F.

  • Cook your lasagna noodles according to the box. When they're done, drain them and let them sit and cool down while you make the roll-up filling.

  • Heat up your oil and then add your onion and garlic. Cook until the onion becomes translucent.

  • Add in your ground beef and all your seasonings; salt, pepper, paprika, and crushed red pepper flakes. Cook the meat until it's no longer pink.

  • Once your meat is cooked, add it to a large mixing bowl and let it cool down.

  • Once your meat is cooled down, we can continue making the filling. The next step is to add the ricotta cheese. The more cheese the better so... add the entire 16 oz container. :)

  • Scramble 2 eggs and add that to the meat/cheese mixture.

  • Would you look at that... more cheese! The amount of mozzarella cheese is up to you. I like to add about 1-2 handfuls.

  • Even though I added spinach to the title of this recipe, it is completely optional. If you're not a fan of it, don't add it. But if you do want it, add about 1 handful. And trust me, you won't regret adding it!

  • Layer the bottom of your casserole dish with your favorite red pasta sauce. I like to use tomato and basil.

  • Now time to assemble the lasagna rolls!

  • Lay your lasagna noodles flat down on a clean surface. Using a spoon, add your filling across the noodle. Use my picture above for an easier view of how to assemble it. :)

  • Assemble all your lasagna roll-ups until your casserole dish is packed tight with each roll. Pour a bit more sauce over top of the rolls and then sprinkle another handful of mozzarella cheese on top.

  • To bake: cover your dish with foil and place in the oven. You'll want to bake for about 10-20 minutes and then turn your broil on high. Remove the foil and let the cheese on top get a nice crispy layer/color.
