Instant Pot/Slow Cooked Beef Goulash
If you've ever had beef goulash, you know how amazing it is. Not only does it taste good, but it also smells good and even looks good! All the colors of the vegetables in the goulash with the tender, pull-apart beef chunks... chef's kiss!
What is goulash?
Goulash is a soup or stew of meat and vegetables seasoned with lots of spices. This dish originated in Hungary and is a symbol of their country.

It took a while to figure out the best spices and seasonings to really make this dish pop with flavor. I created an almost perfect recipe and am super excited to share it with you!
Let's start with our list of ingredients:

- Beef Chunks
- Cooking Oil
- 3 tsp Salt
- 3 tsp Pepper
- 1 Onion
- 5 Garlic Cloves
- 1 cup Carrots
- 1 cup Celery
- 2 tsp Garlic Powder
- 2 tsp Onion Powder
- 3 tsp Oregano
- 2 tsp Crushed Red Pepper Flakes (optional)
- 2 cups Vegetable Broth
- 2 tbsp Tomato Paste
- 2 or 3 Stems of Thyme

You will start by seasoning your beef chunks with salt and pepper. Make sure all chunks are seasoned nicely.

Heat up about 2 tsp of your choice of cooking oil. Once heated, add your beef chunks and pan-sear them until they are nicely cooked inside and out.

While your beef is cooking, let's chop up our vegetables. Dice your onion and mince your garlic cloves. I like to pre-cut my carrots and celery when I buy them. I'd say about 1 cup of each for this dish.

Once your beef is fully cooked, put it in your slow cooker or instant pot.

In the same pan you used for the beef, add your diced onion. Once translucent, add your minced garlic. Fry until both starts turning a brownish color.

Add your cup of chopped carrots. Mix and cover your pan, and let it cook until the carrots start to soften.

Add your celery, mix and again, cover the pan so the vegetables continue softening.

It's time for the seasonings! Season your vegetables with two teaspoons each of garlic powder, onion powder, and oregano. If you want your dish to be a bit spicy, add the crushed red pepper flakes. If not, don't add it. Mix until well combined and let it fry for another minute or so, until aromatic.

Add your vegetable and seasoning mix to the pot where your beef is.

Add the vegetable broth or your broth of choice. You can also use 2 cups of water. Mix.

Season with another teaspoon of salt, pepper, and oregano. Add your stems of thyme as well. Mix until it's well combined and then add your tomato paste. Cover your instant pot or slow cooker and set it to cook for six (6) hours.

Serve with yummy, creamy mashed potatoes or white rice. I hope you guys enjoy this dish!
