Homemade Beef Birria

This dish might be my ultimate favorite to eat so far! The flavorful comsomé with the pull-apart beef chunks... an absolute beauty.

You can eat it as it is topped with white onion and cilantro pieces or make the famous birria tacos and ramen with it! It's a hit every time.

I thought about getting into this dish's facts and where it originates from, but isn't that what Google is for? Let's get straight to the point of this blog post, shall we?

Ingredients


Beef:

  • Beef Chunks

  • 1 tsp Salt

  • 1 tsp Pepper

  • 1 tbsp Oil

Consomé

  • 7 Dried Guajillo Chiles

  • 4 Dried Ancho Chiles

  • 1 onion

  • 4 garlic cloves

  • 2 tsp salt

  • 2 tsp pepper

  • 2 tsp chili powder

  • 2 tsp Mexican oregano

  • 2 tsp Cumin

  • 1 1/2 tsp cloves

  • 1 1/2 tsp

  • 1 cinnamon stick

  • 3/4 cup tomato sauce

  • 1 can diced tomatoes

  • 1 cup Water from the Soaked Chiles

Serving:

  • Onion

  • Cilantro

  • Corn Tortillas (for the Birria tacos)

  • Ramen (for Birria ramen)

  • Mozzarella cheese

  • Start by adding your chiles to a pot and cover them with water. Place the pot over high heat and let the water come to a boil. Once it starts boiling, turn the heat off and cover the pot.

  • Let the chiles soak in the hot water for 10 minutes.

  • While the chiles are soaking, we will work on the beef.

  • Wash and dry your beef chunks. I use about 10-15 chunks of beef.

  • Marinate with 1 tsp salt and 1 tsp pepper.

  • Heat your oil over high heat. Once heated, add in your beef chunks. The point of this is to give the beef a nice charred coat. There's no need to fully cook the beef as that will happen when we are pressure cooking it.

  • Once finished, add your beef to the pot of the pressure cooker you are using.

  • While your beef is charring and your chiles are soaking, let's prep the rest of the comsomé ingredients.

  • In your food blender, add in the following: all the soaked chiles (seeds included), spices, onion, garlic cloves, tomato sauce, diced tomatoes, and about 1 cup of the water that the chiles were soaking in.

  • Now blend! It's important you make sure there are NO chunks in the consomé.

  • Pour the consomé into the pot where the beef is. If your consomé turned out thick, you can pour another cup or two of the chile-soaked water.

  • Give it a good mix. Cover it and let it pressure cook for 2 hours.

  • Once it's done, shred your meat and serve it however you'd like! I recommend making birria tacos!
