Creamy Cajun Chicken Pasta

This pasta recipe is so easy and quick for a busy weeknight dinner or a date night with your partner! It's so good that everyone will enjoy it!

Ingredients
Pasta
1 Box Choice of Pasta
Pinch of Salt
Drizzle of Oil
Chicken
2 Chicken Breasts
3 tbsp Oil
Salt
Pepper
Chili Powder
Cayenne Pepper
Paprika
Cumin
Ground Coriander
Sauce
1 Onion, diced
3 Garlic Cloves, minced
1 Bell Pepper, diced
5-7 Mushrooms, sliced
5-10 Cherry Tomatoes, sliced in half
2 cups Heavy Whipping Cream
2 tbsp Cajun Seasoning
1 Handful of Mozzarella Cheese

Start by preheating your oven to 375 degrees F.
Next, boil your box of pasta according to the box. You can use penne, garden rotini, rigatoni, etc. Let the pasta cook while you are making the chicken/cajun sauce.

Cut your chicken breasts in half so you should have 4 thin breasts. Marinate your chicken with your oil, salt, pepper, chili powder, cayenne pepper powder, paprika powder, cumin, and ground coriander.
Make sure all parts of the breasts are covered in the marinade. You can let it sit for a few hours for better flavor or cook it right away.
Start by pan-searing your chicken breasts on both sides for about 2-4 minutes or until a nice layer of crisp has formed. When done, add the breasts to an oven-safe pan and bake it for about 10 minutes or until cooked fully through.

While your chicken is baking, let's prep our vegetables and make the sauce!
Dice your onion and bell pepper. Mince your garlic cloves and slice your mushrooms and cherry tomatoes.

In the same pan you seared your chicken, drizzle a bit more oil, and when heated, add your onion and garlic. Mix and let it cook until translucent.

Next, add your bell pepper and tomatoes. Mix and let cook until they start to soften.

Finally, add your mushrooms. Again, mix, and let cook until completely softened. About 2-4 minutes.

Pour in your heavy whipping cream and add your cajun seasoning. Mix and let it get to a boil then drizzle your handful of mozzarella. You can also use parmesan cheese. Mix and then let cook for a little longer until it starts to thicken.

Your chicken should be done by this point. Slice your chicken breasts into nice thin pieces.

Add your chicken pieces to the sauce and mix. Cover and let sit on low heat for 2-4 minutes until it thickens a bit more.

Combine your sauce with the cooked and drained pasta. Enjoy!
