Arroz Con Pollo - Rice with Chicken

This arroz con pollo (rice with chicken) recipe is a staple in my house! When I made it for the very first time, not only did I fall in love with it but so did my husband and my in-laws!

This dish is not only delicious, but it's an easy meal filled with flavors of all kinds.

What is Arroz con Pollo?

Arroz con Pollo means rice with chicken. It's a traditional Latin American dish consisting of rice, beautifully seasoned and seared chicken, and a plethora of vegetables.

My version of this dish consists of a few different kinds of vegetables for color and flavor. Here are the ingredients you need:


For the Chicken:

  • 2 chicken breasts

  • 3 tbsp Oil

  • 2 tsp cumin

  • 2 tsp paprika

  • 1 tsp chili powder

  • 1 tsp coriander

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 2 tsp salt

  • 2 tsp pepper

For the Rice:

  • 1 cup cooking oil

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 5-10 cherry tomatoes, cut in half

  • 2 bell pepper, diced

  • 1 tsp ground coriander

  • 1 tsp cumin

  • 1 tsp turmeric

  • 1 tsp garlic powder

  • 1 tsp oregano

  • 2 tsp salt

  • 2 tsp pepper

  • 2 ½ cups water

  • 2 cups basmati rice, soaked in water for 15-30 min

  • Start by putting your rice to soak.

  • Cut up your chicken breast into bite-size pieces. Add them to a bowl and season with; oil, salt, pepper, garlic & onion powder, paprika, chili powder, cumin, and ground coriander.

  • Make sure all chicken pieces are covered evenly! Cover the chicken and let sit to marinate in the fridge. It will marinate while we make the rice.

  • Let's prep the vegetables. Dice your onion and bell peppers. Mince your garlic cloves and cut your tomatoes in half. If you're using whole tomatoes, dice them up.

  • Heat your oil in your pot. Once it's heated, add your onion and garlic. Let fry until they start turning a nice brown color.

  • Add in your tomatoes. Mix and let it cook until the tomatoes start to soften nicely. About 2-3 minutes.

  • Add your bell peppers. Cover the pot and again, mix, and let it cook for another 1-3 minutes to let the vegetables soften.

  • Time for the seasonings! Add in all your spices to the vegetables and mix until all is covered well. Cover the pot and let it cook for another 30 seconds.

  • Pour 2 1/2 cups of water into the pot. Mix it and let it simmer. Once it starts coming to a boiling point, add in the 2 cups of pre-soaked rice.

  • Mix it and let the rice soak up 85% of the water.

  • While your rice is cooking, cook your marinated chicken breast in a separate pan.

  • Once your rice has soaked the majority of the water, layer the top of your pot with the chicken breast pieces as shown in the picture.

  • Cover your pot and let it cook on low until the rice has soaked up all the water.

  7. Pour 2 1/2 cups of water into the pot. Mix it and let it simmer. Once it starts coming to a boiling point, add in the 2 cups of pre-soaked rice.

  8. Mix it and let the rice soak up 85% of the water. While your rice is cooking, cook your marinated chicken breast in a separate pan.

  9. Once your rice has soaked the majority of the water, layer the top of your pot with the chicken breast pieces.

  10. Cover your pot and let it cook on low until the rice has soaked up all the water.
